But seriously: Thanks to modern processing methods, making decaf really good is no longer as difficult as it used to be; although we have to admit that sourcing it is still a bit of a challenge.
But sometimes we stumble across gems like this one from Swiss Water's small-batch series . And of course, we grab it for you!
Regarding origin:
Under the umbrella of Gold Mountain Coffee Growers, over 70 producers in Nicaragua are gathered, whose community is characterized by special quality standards, social economy, careful use of resources and traceability in cultivation.
Regarding the processing:
This coffee is partly carbonic macerated, partly natural (dry) processed, and then decaffeinated using Swiss Water
Speaking of decaffeination , here's how it works:
A first batch of green coffee beans is soaked in water to dissolve all the water-soluble components (caffeine and aromas). The caffeine is then filtered out of this enriched water. The water is now saturated with the coffee's aromas and therefore only extracts the caffeine from the next batch of green coffee beans. Et voilà! A decaf with all its natural aromas.
