"This year is apparently a truly great year for coffee, especially in Ethiopia (if you only knew what else is waiting for us in our warehouse!).
This lot comes from the village of Chelbesa (located in the Gedeb district of the Gedeo Zone, where we already know a few highlights ;)), where SNAP operates a washing station at an altitude of over 2000 meters. 650 small farmers from the region bring their cherries here, where they are processed either using the washed or natural method.
In our case, the processing is washed: After the cherries, which grow in the shade of the trees, are brought to the station, they are partially fermented for 45 to 60 hours (again in the shade). Afterwards, they are washed in tiled tanks – the pulp is removed – and dried on drying beds for 7–10 days. "
