"Carlos, Jhoan and Diego decide to develop reproducible profiles in order to highlight the potential of each variety, each having its fundamental role on the farm.
Carlos and Diego are responsible for the transformation and management of fermentation times, types of processes and care taken during drying.
Jhoan is responsible for analyzing the experiments, defining the appropriate process for each variety, and evaluating the quality. He is also responsible for the commercial aspect, promoting the work done together.
In 2019, Jhoan participated in the MASTER OF COFFEE competition, in the coffee grower-roaster category, and won first place among 162 participants with the flagship variety, the pink bourbon, obtained by a semi-washed process.

The process :
Selective harvesting: Ripe cherries are carefully picked.
First fermentation: A 36-hour open-bag fermentation allows the cherries to oxidize.
The cherries are then sorted by density by immersing them in water.
Anaerobic fermentation: The coffee is pulped and sealed in bags for a 60-hour anaerobic process.
Thermal shock: The beans are washed with 40-degree water and then cooled with cold water to stop fermentation.
The beans are then left to dry for 12 to 15 days.
Then decaffeinated by Swiss Water!
This coffee has been decaffeinated using the Swiss Water process: only water, temperature and time are used to gently remove the caffeine, while preserving all the original characteristics of the coffee."
