"Sookoo means 'gold' in Ethioian Amharic. The name comes from the desire to value coffee as precious as gold, and the pride in Guji, the hometown known as a gold mine. Sookoo Coffee specializes in exporting natural coffee from the Guji region, known for its exceptional quality and fair parnterships with local farmers. Founder Ture Waji grew up in Shakiso, Uragawa, Oromia, and has lived a life surrouned by coffee. Drawing on his expertise and field experience as an agronomist he founded Sookoo Coffee in 2018 to introduce Guji to the world.
The coffee introduced this time was also introduced through Sookoo, and it embodies the nature of Guji and the philosphoy of Ture Waji. He focuses on improving quality rather than mass production, and even now, he only produces coffee in the Guji region. His coffees, often referred to as the 'King of Guji'. always display deep flavor and balance. This coffee opens with notes of ripe orange and nectarine, followed by a honey-like sweetness, and a lingering aftertaste reminiscent of rooibos tea, making it a captivating experience.
After selecting ripe cherries and removing the pulp, they are fermented for a relatively short period of 30 hours without removing the mucilage, and then washed. After 30 hours of fermentation, the parchment take on a golden hue during the drying process instead of the white hue of regular washed coffee, which is why it is called 'Gold Honey Processed Cofffee'.
