From Momos:
"Located in Ethiopia’s Guji highlands, Uraga is one of the country’s highest coffee-growing regions, reaching elevations of up to 2,300 meters above sea level.
At this remarkable altitude, where the conditions are almost too extreme for coffee to grow, the cherries ripen exceptionally slowly. The combination of dramatic temperature changes between day and night and rich, fertile soil allows the fruit to develop over time, creating the bright floral aromas and vivid fruit notes that define coffees from Uraga.
During the harvest season, around 425 smallholder farmers deliver their cherries to Gogugu Washing Station. These are families who have cultivated coffee for generations. Each ripe, red cherry is carefully picked by hand, and together, they become the starting point of this coffee.
Once the cherries arrive at the station, they are carefully sorted again and spread evenly across approximately 120 African drying beds. Over the course of 20 to 25 days, the cherries are turned continuously to prevent over-fermentation and ensure a slow, even drying process.
Experience the natural sweetness and vibrant fruit character developed within the whole cherry, unfolding beautifully in every cup."
