From Banexport:
'Finca Juan Martín, located at 2,050 meters in Sotará, Cauca, Colombia, is a high-altitude coffee farm owned by Banexport S.A. and established in 2018 as a model for sustainable, high-quality coffee production.
 
For this washed pink bourbon, the coffee is disinfected after harvest and sorted into three different size classifications. After this, they are depulped and fermented in a controlled bioreactor that is designed to enhance the floral, spicy and fruity notes of the pink bourbon variety. After fermenting, the coffee is washed.'
 
WHY WE SELECTED THIS COFFEE
We’re excited to share our last and favorite coffee from Finca Juan Martín this season. This Washed Pink Bourbon captures everything we love about this producer’s work: clarity, balance, and a true sense of the terroir.
The cup is very clean and expressive, full of lovely complexity in the acidity. Expect bright notes of citrus pomelo and ripe apricot, with a touch of strawberry peeking through as it cools. A gentle rose floral note carries throughout, creating a beautifully layered and graceful experience.
 
Juan Martín continues to do incredible work in preserving the terroir characteristics of each varietal, and this coffee is no exception.
