"Wondafrash has been working in coffee for over ten years. He actually started as an exporter, handling coffees for his family members — part of a family of 29 siblings, almost all of whom work in coffee.
In 2017, when Ethiopia changed the rules to allow exporters to also produce and vice versa, he began farming coffee himself. By 2019, he had built his first washing station, Buku Abel, in the Hambella district of Guji. The station sits at about 2300m (~7500ft) above sea level, and he’s been operating it for six years now.
This is Wondafrash’s third harvest season experimenting with anaerobic processing, and last year’s lot was many roasters’ favorite. After experimenting with different fermentation time periods, he’s dialed it into a 72 hour fermentation, and the result is a beautifully balanced anaerobic coffee."
